A note from the kitchen

Why I cook this way.

I learned to cook in Japan, alone, because I had to. It became a habit.

When I moved to Delhi it became the thing that emptied my head at the end of a long week.

The first kitchen.
Then it turned into a complaint.

I couldn't find a kitchen in this city using ingredients I'd be willing to cook with myself. And I couldn't find anyone who would cook what I imagined. Everyone hands you a menu and asks you to choose a row.

So nothing gets compromised on the way in. Ask me what brand of anything went into your dish and I'll tell you. My palate is the only quality control I have — I can taste a plate and name what's in it — and I'm not going to embarrass it.

Twenty-five orders a weekend. That's not a marketing line, it's a hard stop. Sucharita and I both work full-time and there's a child at home. Past twenty-five, cooking turns into stress, and stressed food tastes like it. We'd rather cook less and cook it properly.

The practicalities

The kitchen

A weekend cloud kitchen out of a CR Park home. One chef. Two helpers. Saturdays and Sundays. Twenty-five orders per weekend, hard cap. Bengali ingredients meeting world cuisines, with one exotic element in every dish — posto cream, kasundi beurre blanc, gondhoraj zest, prawn-head bisque, nolen gur glaze.

The rhythm

Order through the week — Friday dinner closes at 3 PM Friday, Saturday dinner at 3 PM Saturday, and Sunday lunch at 8 PM Saturday. We cook and deliver across the weekend. Monday we rest.

The AI

Behind the dish designer and the WhatsApp chat is Claude, helping interpret what you want and design the right dish. The cooking is human. The orchestration is not.

Our standards
What goes in your container

No shortcuts where they matter. Ten standards we hold to, every weekend.

We don't try to do everything in-house. What matters is the dish concept and the quality of every ingredient that goes into it. Where we can source something better than we'd make ourselves, we source it. Where we can do it better, we make it. If any of these ever break, you'll hear it from us first.

Cold-pressed mustard oil
Kachhi-ghani only. The smoke-point ritual that gives Bengali food its backbone.

Olive oil for finishing
Extra-virgin where the dish wants the oil raw — drizzles, vinaigrettes, the last touch.

Fresh fish from CR Park Market 1
Bengali river and coastal fish — Bhetki, Rui, River Sole, Red Snapper, Pomfret — sourced fresh from CR Park Market 1, the Bengali fish quarter, from vendors we've built long relationships with who reserve the day's best catch for us. Some seasonal and deep-sea fish (off-season Hilsa, certain imports) are carefully frozen at source — we'd rather use top-quality frozen than poor-quality "fresh".

Baby goat, mutton & specialty proteins
Baby goat — tender, premium — as our default. Mature mutton used only where the dish technique needs it (slow-braised kosha, where mature meat benefits from a long cook). Duck, squid, and crab meat from a reputed INA Market vendor we've worked with for years. All cuts ordered fresh, not pre-portioned.

No maida
Sourdough and whole-wheat breads, sourced from bakers we trust who use the right flours. Parathas, focaccia, naan — none with refined flour. Fresh wheat or multigrain pasta, chef's pick. Some things others do better than we could in our own kitchen, and we'd rather source the best than bake something second-rate.

Pink Himalayan salt, low sodium
Pink salt for everyday cooking, sea salt only for finishing crunch. We season conservatively — taste before you reach for the shaker.

No red chilli powder, no food colouring
Only Kashmiri mirch, paprika, or deghi mirch — for warmth and natural colour, never raw heat. If a dish looks red, it earned that colour honestly.

Designed light, low-fat
Every dish is engineered to sit easy on the stomach. No leaden gravies, no over-fried anything. You should feel good two hours after dinner.

Dips & condiments made in-house
Including the aamsotto-khejur chutney that ships with every order. Nothing from a jar, nothing from a packet.

Fresh oil per batch
Frying oil is never reused. Each batch gets clean oil. Costs more, tastes cleaner, easier on you.

If a weekend goes sideways and we have to break any of these, we'll tell you before you order — not after you eat. That's the deal.
